If you are looking to impress...you just found the right recipe. This take only 15 minutes to make.
Ingredients:
1 courgette
2 or 3 cloves of garlic
1 whole chilli
3 tsp Chickpea flour
Salt (to taste)
*For this recipe you should use a frying pan that can go to the oven
Process:
Slice the courgette in 1 inch slices. Cut out the insides, put these in the processor with 2 cloves of garlic (or 3 if you love garlic), along with the whole chilli, a small bunch of some fresh herbs of your choice (such as coriander, salsa, chives) and 3 tsp of chickpea flour (normal flour will also work) and salt to taste - blend until creamy.
In a pan with a drizzle of oil, fry the courgette slices in high heat for 1 minute, lower the heat to a minimum and fill the hollow slices to the top with the creamy mixture, cover with a lid and let it fry for another 4 minutes - these should rise beautifully. Remove the lid and place them under a preheated grill at maximum temperature for 5 minutes. Make sure to not place these too close to the grill heater, in the middle of the oven should be alright. Serve them hot with a cold salad.

Tips:
Don't be shy to try different flavours in the cream. You can also do this same process with potatoes, sweet potatoes and any other vegetables that you can get thick slices. The cooking times will vary, just pierce them with a fork to check it they are cooked through.
