Great for a last minute dinner 🌱💚
Ingredients:
3 onions
3 medium courgettes
1 tsp salt
2 tsp cumin
3 to 4 cups of chickpea flour
Process:
In the blender add the 3 onions, 3 courgettes, 1 tsp of salt and some chillies (optional) blitz it all till it becomes coarse looking. Then, add 2 tsp of cumin, 3 to 4 cups of chickpea flour to get a porridge-like consistency. With two table spoons (or an ice-cream scoop, that's what I used), form the mix and drop them into a pan with oil for deep-frying at medium heat (the oil should already be hot). When the scoops become a golden brown, take them out and onto a bowl with some kitchen paper roll to absorb the excess oil.
